Collagen Protein Pancakes Recipe (Fluffy & High-Protein)

Collagen Protein Pancakes Recipe (Fluffy & High-Protein)

Why Add Collagen to Pancakes?

Standard pancake recipes are heavy on carbs and light on protein. Adding NUTRIBAS Hydrolyzed Multi Collagen Peptides boosts protein significantly without changing taste, texture, or fluffiness. Collagen peptides are heat-stable and bake seamlessly into the batter.

Each serving delivers approximately 25g of protein from collagen + eggs + Greek yogurt.

Collagen Protein Pancakes Recipe

Prep time: 5 minutes | Cook time: 15 minutes | Servings: 2 (about 6 medium pancakes)

Ingredients

  • 1 cup all-purpose flour (or oat flour for gluten-free)
  • 2 scoops (20g) NUTRIBAS Collagen Peptides Unflavored
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp sea salt
  • 1 tsp cinnamon (optional)
  • 2 large eggs
  • ¾ cup milk of choice
  • ¼ cup plain Greek yogurt
  • 1 tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • 1 tbsp melted coconut oil or butter

Instructions

  1. Whisk together flour, collagen peptides, baking powder, baking soda, salt, and cinnamon in a large bowl.
  2. In a separate bowl, whisk eggs, milk, Greek yogurt, maple syrup, vanilla, and melted coconut oil.
  3. Pour wet into dry and stir until just combined. Do not overmix — a few lumps keep the pancakes fluffy.
  4. Rest batter for 3–5 minutes while heating a greased non-stick skillet over medium heat.
  5. Pour ¼ cup batter per pancake. Cook until bubbles form and edges look set, about 2–3 minutes.
  6. Flip and cook another 1–2 minutes until golden. Repeat with remaining batter.

Tip: Keep finished pancakes warm in a 200°F (93°C) oven while you cook the rest.

Gluten-Free Option

Replace all-purpose flour with 1 cup certified gluten-free oat flour. Add an extra 1–2 tbsp milk if the batter seems too thick.

4 Topping Ideas

  • Classic Maple Berry: Fresh mixed berries, maple syrup, and a dollop of Greek yogurt.
  • Peanut Butter Banana: Sliced banana, 2 tbsp peanut butter, and cacao nibs.
  • Lemon Ricotta: A spoonful of ricotta, lemon zest, honey, and fresh blueberries.
  • Chocolate Hazelnut: Dark chocolate drizzle, crushed hazelnuts, and sliced strawberries.

Storage

  • Refrigerator: Up to 4 days. Reheat in a toaster or skillet.
  • Freezer: Up to 2 months. Toast directly from frozen.
